I wanted to share one of my “go to recipes” with you all. Not only is this Bar tasty but its very nutritious as well ! It also happens to be one of my Hubby’s favorite & a kid pleaser as well! They are super simple to make & easy to prep for a healthy snack on the go. Just wrap bars in wax paper & put into baggies when cooled. Store bars in fridge for up to a week or freeze for later use! I personally make a double batch & put one in freezer. So if things get busy I have some back up snacks for the Hubby’s lunch.
GRANOLA JAM BARS
1/2 C. Coconut Sugar
1 C. Flour ( any kind)
1 C. Any kind of Rolled Oats ( quick cooking oats work great to)
1/4 tsp. Baking Soda
2 Tbs. Chia & Hemp or Flaxseeds
1/2 tsp. Ginger & Cinnamon ( use any spice you like, or omit)
1 Tbs. Baobab powder( optional, its a superfood powder I add to mine)
1/2 C. Coconut Oil ( solid) or Butter( room temp)
1 C. Jam or Jelly ( any kind you like)
1 Egg ( optional) : makes for a denser crust
Instructions:
Heat oven to 350 & grease or line with parchment paper an 8 x 8 square pan. Mix first 6 ingredients together. Then add the solid coconut oil or butter, incorporating it until it forms a crumbly texture. If using an egg, add at this point mixing it well. Then take 2/3 of the mixture & press firmly into greased or lined pan. Spread jam on top of the pressed crust & add the remaining crumbly mixture evenly over the top of the jam. Pressing down after adding the top layer. Pop into the oven & bake 20 -30 minutes depending on your oven. Let cool when done & cut into squares.
